We gotta eat!

Harvest Lentil Soup

Two things inspired this recipe - first, I was craving the apple spice donuts and had bought a large bottle of cider.  Second, I woke up this morning and glanced out the window before walking the dog-despite, the constant 80 degree weather-the sky was one big misty fog.  That felt like fall.  Walking and feeling the weather.  Low visibility with lights a blur.  A chill that reminded me it is time to pull out the winter wardrobe.

As a type 1 home, we actually never have juice in the house. I mean the good bottles of fresh juice.  You will find juice boxes in the cabinet and capri suns in the back of the bottom shelf in the fridge-those stashes to treat the lows. But rarely, if ever, do we buy the cartons or bottles.  So finding myself with a large bottle of cider that I know will go bad, I had to get creative.

I figured it would pare well with squash.  Then, I've been trying to eat more lentils so lets add that.  It really was about that simple.

I broke out the crockpot for this recipe, it worked perfectly.

Started with the veggies - onions, carrots, squash.  Then added some spices - salt, pepper, garlic powder, oregano, and any thing else you prefer.  After sorting and rinsing the red lentils add them to the pot.

Then add 3 cups of apple cider and 1 cup of either water or vegetable broth.  Cook on low for 8 hours stirring occasionally if possible.

Then enjoy - by itself or with bread or chips!
