I was never a yogurt person, but yet here I find myself eating this yogurt almost daily! It’s so easy to make and nice to know I have some in the fridge to grab for a healthy snack. I take it to work and enjoy for a morning break to tide me over until lunch time. Here is my favorite way to eat right now. I bought myself a cyber Monday instant pot as a Christmas/birthday present to myself and I am so glad I did. I have really enjoyed trying new recipes in it and have a quick healthy dinner option to turn to in a pinch. But another thing I like to use the instant pot for is making vegan yogurt. You have to plan ahead as the timing on it is a bit extensive. There’s soooooo many recipes online for this and I have yet to try more than two. Really I found one that works great so why mess with it?!?! However, I do want to try more that use less soy, so we’ll see if I ever find that motivation. This is so easy and it only requires 2 ingredients. Yep. 2. Soy milk (key here is no additional ingredients besides water and soybeans, HOWEVER, I buy the unsweetened vanilla and it works fine) 2 tbsp of vegan yogurt (I like Kite Hill or my previous batch) Mix together and put in containers that can go in the instant pot (I use mason jars). Put the jars (or other) directly in the pot, no trivet, no water. Close the lid and seal. Select yogurt and set for 12 hours and 30 minutes. Once done, remove from the pot (it doesn’t come to pressure so you can just open the lid), put lids on the jars and set on the counter to cool for a little bit, then stick those suckers in the fridge to firm up a little more and enjoy the next day. Here is how I’m enjoying them right now. A couple of spoonfuls of Trader Joe’s grapefruit marmalade and some gluten free coconut granola mixed in.
